Ingredients

Where do the ingredients for your products come from?

When it comes to our products, freshness and sustainability are especially important to us. That’s why we ensure resource-friendly sourcing right from the ingredients for our products. Fish is an important component of our range. We therefore place great value on fair conditions in farming and fishing. We process exclusively salmon of Sashimi quality. It comes 100 percent from Europe and from suppliers with whom we have worked for years and are in constant dialogue. The selected aquaculture farms in Norway meet strict requirements in their farming. This is how we ensure the highest quality for our salmon. The raw tuna comes exclusively from healthy stocks. Our Ebi prawns are ACS-certified, and the Masago and Surimi hold MSC certificates. Do you have further questions about our products and ingredients? Send us a message now! We’re happy to help.

Do your products contain gluten?

Indeed, some of our products, such as our soy sauce or our Inari, contain gluten. Our rice, however, is gluten-free. The possible use of gluten is carefully declared on each of our product labels in accordance with the legal regulations. If you have further questions on this topic, feel free to write us a message!

Do you also have vegetarian / vegan products?

Already today, 25 percent of the entire EAT HAPPY range is vegetarian or vegan – and, for the sake of sustainability, we are working on many more vegetarian and vegan alternatives. You can also find all the components of our Sushi rolls on the labels of our products. Right next to the product name on the label you can see which products are vegetarian or vegan. Take a look here to see whether we have something for you.

Production

What happens to the unsold Sushi?

We place great value on fresh products and make our Sushi to the highest standards. That’s why we give our Sushi a shelf life of one day (production date +1 day). Accordingly, the products you see in the display in the evening were produced that same day and can still be sold the next day. On the following day, however, we have to dispose of our Sushi for reasons of consumer protection. We do, however, try to keep the amounts thrown away as low as possible. The EAT HAPPY Rescue Bag also contributes to this: here we offer selected EAT HAPPY products from the previous day in our shops across Germany, bundled together at a discounted price. Thanks to the high quality of the ingredients and the fresh preparation, the Sushi is still good and suitable for consumption. At the same time, thanks to the large number of locations, we can ensure that each shop individually produces the right amount of Sushi. Likewise, we can respond quickly to different customer wishes and regional preferences and thereby avoid surplus stock.

Why do you use plastic packaging?

For several years we have been continuously working on optimising our packaging in order to reduce the use of plastic as well as CO2 emissions. We have already been able to ensure that the plastic packaging we use consists of 80-100 percent recycled plastic. During this time, however, we have also tested other materials as an alternative to our plastic packaging. This was always subject to the indispensable condition that the particularly sensitive foods we sell are packaged to a high quality. This includes in particular protecting the products from negative external influences as well as ensuring flawless product quality.

If you personally would like to help avoid waste, as part of our „Bring your own box“ offer we give you the option to hand in your own box at our shops and let the Sushi chefs know your wishes. They will fill your box with the products made for you as quickly as possible where feasible. Please note, however, that for reasons of hygiene and safety the Sushi chefs are not permitted to take in or fill either dirty boxes or glass containers in the shop.

Shelf life & Freshness

How fresh is your Sushi?

All our ingredients, from the rice and the fish to the vegetables and fruit, are freshly prepared by our employees every day in the shop of the respective supermarket and hand-rolled into delicious Sushi creations for you.

How long does your Sushi keep?

In our EAT HAPPY shops we roll fresh Sushi every day and label it with the shelf-life information. We give our Sushi a shelf life of one day (production date +1 day). The food can and may be eaten without any concern up to the use-by date we state. With a longer shelf-life date, many natural products, such as the avocado for example, would show browning reactions without further treatment. We could only influence this by using additives, but we consciously choose not to use them.
